Summer Fun Recipes! Please Share Yours!

At Conesuslake.com we are so happy that summer has finally arrived and with that comes boating on Conesus Lake, Honeoye Lake and many of the other beautiful lakes in the area.  We often pack picnics and take them on our boat to have celebrations and picnics with family and friends!! Finding summer recipe can be so much fun!  Below are some great tasting summer recipes to help you in your summer fun cooking!  

                                             

For a homemade look, freeze crust for five minutes, and then slip it into your favorite pie plate before adding filling.

How to Make It

Step 1 :Whisk together evaporated milk and next 2 ingredients in a bowl 2 minutes or until mixture is thickened.
Step 2: Beat cream cheese and vanilla at medium speed with an electric mixer until fluffy. Add lemonade concentrate, beating until smooth; add milk mixture, and beat until blended. Pour into crust. Cover and chill 8 hours or until firm. Dollop each slice with whipped topping. Garnish, if desired.
 
                                        
 
Ingredients
  • 1 small yellow onion , chopped
  • 2 garlic cloves
  • 1 cup shredded sweetened coconut
  • zest and juice of 1 lime
  • 1 cup fresh cilantro or parsley , chopped
  • 1/4- cup olive oil
  • 1/4- cup soy sauce
  • 1 pound raw shrimp , peeled and deveined
  • 8 to 10 aluminum foil sheets large enough to wrap around the food
  • 1 zucchini , sliced into 1/4-inch rounds
  • 1 to 2 cups corn kernels (you can also use frozen corn kernels)
  • chopped fresh cilantro or parsley , for garnish
Instructions
  1. In a blender, combine onions, garlic, coconut, lime zest, lime juice, cilantro, olive oil and soy sauce; blend until smooth.
  2. Place marinade and shrimp in a resealable bag and toss to coat.
  3. Place in the fridge for 2 to 4 hours.
  4. Preheat an outdoor grill to medium-high heat.
  5. For each foil pack, prepare two sheets of aluminum foil; place the sheets one on top of the other for durability and lightly spray with cooking spray.
  6. Divide up the veggies and shrimp evenly and place into the center of each foil packet.
  7. Fold the sides of the foil over the shrimp, covering completely; seal the packets closed.
  8. Transfer the foil packets to the grill, cover grill and cook for 10-12 minutes, or until shrimp are opaque.
  9. Carefully open the foil packets and stir the contents.
  10. Sprinkle with cilantro or parsley and serve.
